Description

These Crispy Cheesy Beef Potato Croquettes are the ultimate comfort food. Made with creamy seasoned potatoes, savory ground beef, and melty cheese, each croquette is coated in crispy panko and fried to golden perfection. Served with a flavorful garlic aioli, they’re perfect as an appetizer, snack, or indulgent main dish.

Instructions

  1. Prepare the Potatoes

    Bring a large pot of salted water to a boil. Add the peeled and cubed potatoes and cook until fork tender, about 15–20 minutes.

     

  1. Drain well and mash until smooth. Add garlic, salt, pepper, and remaining seasonings. Mix thoroughly, then stir in the egg until fully combined. Set aside to cool slightly.


     

  1. Cook the Beef Filling

    In a skillet over medium heat, cook the ground beef. Add diced onion and cook until softened, about 3–4 minutes.

  1. Stir in garlic, paprika, onion & garlic seasoning, parsley, and salt. Cook until beef is browned and fully cooked. Remove from heat and let cool.

  1. Assemble the Croquettes

    Scoop a portion of the potato mixture and flatten it in your hand.

    Add a spoonful of beef filling and a pinch of shredded cheese to the center. Carefully fold the potato around the filling and shape into a ball or flatten ball about 1 inch thick. 

    Repeat with the remaining mixture.

  1. Bread the Croquettes

    Set up a breading station:

    • Bowl 1: flour
    • Bowl 2: beaten eggs
    • Bowl 3: panko

    Roll each croquette in flour, then egg, then panko, pressing gently so it sticks well.

  1. Fry Until Crispy

    Heat oil in a deep pan to 350°F.

    Fry croquettes in batches for 3–4 minutes, or until golden brown and crispy. Avoid overcrowding the pan.

    Remove and place on a paper towel-lined plate.

  1. Make the Garlic Aioli

    In a small bowl, mix together mayo, lemon juice, garlic, olive oil, chives, and pepper until smooth.

  1. Serve

    Serve croquettes hot and crispy with garlic aioli on the side.
