If you love the flavors of chicken fajitas and comforting pasta, this creamy chicken fajita pasta is the perfect dinner. Juicy seasoned chicken, colorful bell peppers, and tender pasta are tossed in a creamy, cheesy sauce with classic fajita spices. It’s an easy weeknight meal that comes together in about 30 minutes and is perfect for feeding the whole family.

Instructions

  1. Cook the pasta

    Bring a large pot of well-salted water to a boil and cook spaghetti according to package directions until al dente.Drain and set aside.

  1. Season the chicken

    Season both sides of the chicken with onion powder, paprika, smoked paprika, adobo seasoning, garlic powder, and cumin.

  1. Sear the chicken

    Heat olive oil in a large skillet over medium heat.Add the chicken and sear for 4–5 minutes per side, or until fully cooked and nicely browned.Remove chicken from the pan and set aside. Do not wipe out the pan.

  1. Start the sauce

    In the same skillet, melt the butter over medium heat.Add the chopped onion and sweet peppers and cook for about 5 minutes, stirring occasionally, until softened.

  1. Stir in the garlic and cherry tomatoes.Cook for an additional 2–3 minutes, until fragrant and the tomatoes begin to soften.

  1. Season the sauce

    Add onion powder, garlic powder, paprika, smoked paprika, salt, and pepper.Stir well to evenly distribute the seasonings.

  1. Pour in the heavy cream and stir to combine.Taste and adjust salt and pepper if needed.

  1. Bring the sauce to a gentle simmer and let it cook for about 5 minutes, or until slightly thickened.

  1. Finish with cheeseTurn off the heat and stir in the shredded parmesan cheese until fully melted and smooth.

  1. Combine and serve

    Add the cooked spaghetti directly to the sauce and toss until evenly coated. Top with the seared chicken (or slice it and mix it in). Serve warm.

Note

  • Finely chopping the onions and peppers gives you all the fajita flavor without overpowering the dish.
  • If the sauce thickens too much, add a splash of pasta water or cream to loosen it.
  • This reheats best with a little extra cream or milk stirred in.
