Ingredients

Beef

Cheese Sauce

Assembly

Chipotle Sauce

Instructions

  1. Cook the Beef

In a large pan over medium heat, cook the ground beef until it begins to brown.

Add the taco seasoning (or homemade spice mix) along with a splash of water. Stir well and continue cooking until the beef is fully browned and coated in the seasoning. Set aside.

  1. Make the Cheese Sauce

In a separate pan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to remove the raw flour taste.

  1. Slowly add the milk while whisking continuously to prevent lumps. Let the mixture simmer for 4–5 minutes, or until thickened.

  1. Remove from heat and stir in the shredded cheddar cheese, chopped jalapeños, jalapeño juice, garlic powder, onion powder, salt, and bacon. Mix until smooth and creamy.

  1. Combine Beef & Sauce

Add about one-third of the cheese sauce to the cooked beef. Stir to combine, adding a small splash of water if needed to loosen the mixture.

This step makes the beef extra saucy and flavorful.

  1. Assemble the Nachos

    n an oven-safe dish, layer:

    • Doritos
    • Beef mixture
    • Remaining cheese sauce
    • Shredded Mexican-style cheese

Bake for 10–15 minutes, or until everything is melted and heated through.

  1. Make the Chipotle Sauce

In a blender or food processor, combine mayo, sour cream, chipotle in adobo, lime juice, salt, and pepper.

    Blend until smooth and creamy.

  1. Finish & Serve

Remove nachos from the oven and load them up with your favorite toppings: lettuce, tomatoes, red onion, fresh jalapeños, sour cream, and chipotle sauce.

Serve immediately while hot and melty.

Note

Tips & Notes

  • Don’t skip mixing cheese sauce into the beef—it adds a ton of flavor
  • Use freshly shredded cheese for the smoothest sauce
  • Add layers if you want more evenly distributed toppings
  • Serve immediately to keep chips from getting soggy
  • Adjust spice level with more or less jalapeños and chipotle

Serving Suggestions
