Prepare the Steak

  1. Start by patting your steak dry with paper towels—this helps it get a better sear. Drizzle olive oil over both sides, then season evenly with smoked paprika, a light sprinkle of salt, and your steak seasoning. Use your hands to rub the seasoning into the meat so it’s fully coated. Set aside while you prep the rest so the flavors can absorb.

Prep the Vegetables

  1. Slice your onions and bell peppers into thin strips. Add them to a bowl, drizzle with olive oil, and season with adobo and a little smoked paprika. Toss everything together until evenly coated. Set aside.

Make the Creamy Corn Salad

  1. In a medium bowl, combine the drained corn, diced roma tomato, chopped red onion, and jalapeño (if using).

Assemble the Bowls

  1. Start with a base of white rice, then add a layer of lettuce.

    Top with sliced steak, sautéed veggies, and a generous scoop of the creamy corn salad.

    Finish with extra cotija cheese and a squeeze of fresh lime juice over the top.
